Baked Pasta

This is comfort food at its best!  Baked pasta is sure to please anytime of year.  Serve with a nice green salad and bob’s your uncle ( what does that mean anyway?) Lol

Easy to make with a simple marinara sauce, some fusilli or penne or rigatoni, mozzarella and a dash of parmesan. You’ve got it made!

What you’re going to need:

  • One small onion – diced
  • 2 cloves of garlic – minced
  • 2 tbsps of Olive oil
  • 1 tsp of crushed red chilli flakes 
  • 4 bay leaves 
  • One tin of crushed tomatoes 540ml
  • 3 tbsps of balsamic vinegar 
  • 3 tbsps of dry oregano leaves
  • Salt and pepper to taste
  • One tbsp of brown sugar 
  • One pound of pasta (454g) or more if you are serving more than 4 people 
  • 2 cups of shredded mozzarella 
  • 1/2 cup of Parmesan 

Directions:

Sure you can buy pasta sauce but why would you want to!  Honestly,  pasta sauce is so easy to make and it’s far more tastier and satisfying.

Start off by adding the olive oil to a medium size sauce pan and heating on medium low then add the onions.  Sauté until onions are translucent.

Now add the garlic, chilli flakes, and bay leaves.  Sauté for about 5 minutes.

Then add the can o’ crushed tomatoes and rinse the can out with about a half cup of water. Also, add the balsamic vinegar, oregano, salt, pepper, and brown sugar.

Just let that simmer for 20 minutes or so.  In the meantime,  get your water ready for the pasta.

Take a large saucepan and fill it halfway with water then add a couple of heaping tablespoons of salt.  Bring it to a boil, then add the pasta.  Be sure to stir the pasta right away or it will stick together in clumps.  Once the pasta has started to soften and is not clumped together just leave it alone for a few minutes and let it do it’s thing. Depending on what type of pasta you’re using it should be ready in about 10 to 15 minutes. Stir the pasta once in awhile but not too much and do not over cook the pasta.  The pasta is done when it is al dente,  which means that the pasta is still firm with a bit of a bite to it.

Once the pasta is done, drain the water from it.  Place the cooked pasta in a large roaster , add the sauce and stir so that the sauce and pasta are well incorporated.  You may not want to add all the sauce to the pasta if it seems like too much.  And that’s okay because you can use it in a different application or freeze it for another time.

Top the pasta with the mozzarella and parmesan.  Bake in a preheated oven at 350 degrees fahrenheit for about 20 minutes.  You may even want to put it under the broiler for a couple of minutes to brown the cheese.

Dinner is ready!

Pasta with a red sauce always pairs nicely with a light red wine like a valpolicella or Chianti.
