Chia Pudding with Yogurt and Berries

Okay, I didn’t actually cook anything here but after a holiday of too much rich foods and too much alcohol it’s time to get back on track to healthier eating. At least it is for me! And this pudding will really clean out those rich food hardened arteries.

There’s a ton of fibre in this and it tastes good too!

  • 1 tbsp of Chia seeds
  • 1 cup of unsweetened almond milk
  • 1/2 cup of berries ( I used frozen berries because of the time of year)
  • 1/4 cup of full fat, no sugar added plain yogurt
  • 1 tbsp of maple syrup

Directions:

Place the Chia seeds in a cereal bowl and then add the almond milk. Let this sit for a minimum 30 minutes. You can prepare it the night before too if your mornings are hectic. At any rate, the longer the better.

When it has the consistency of pudding, it’s ready to eat. But don’t eat it yet! Add some yummy things like the full fat, no sugar added yogurt and berries and maple syrup.

Now give it a good stir and chow down.

This makes for a good breakfast. If you want, add some muesli or hemp hearts or both. It’ll be more hearty and stay with you longer.
