Another versatile vegetable is…believe it or not, Cauliflower! If you’re trying out a keto diet it makes the perfect substitute for potatoes.
You can whip them up like mashed potatoes, turn them into pizza crust, steam them, bake them, stew them, sauté them. For non- keto, you can batter them and deep fry ‘em. You can add them to stir fries, fondues, soups, heck I have put them in French onion soup instead of bread. It works! Just use your imagination and cauliflower can be your friend.💕
- One head of Cauliflower- cut up into florets
- olive oil
- Salt and Pepper
- 1/2 cup of Feta cheese – crumbled
Pre- heat your oven to 350 F .
Place the cauliflower florets into a steamer or if you don’t have a steamer then in a pot with a bit of water. Steam for a couple of minutes. You don’t want to cook them, you only want to heat them up a bit.
Now place cauliflower in a bowl and drizzle with olive oil and salt and pepper. Give them a bit of a toss then dump the works on a baking sheet with sides and spread them out a bit. Next, you will want to crumble the feta all over the cauliflower.
Put tray into the oven and roast for about 10 minutes or until you can put a fork through the cauliflower.
Ta Da! You’re done.
Really…when you’re baking cauliflower like this you can add whatever spices or cheese you want. Go nuts 🥜. Cauliflower will take on whatever flavours you desire.
