Breakfast Burrito

Not to worry, grasshopper…I have taken a picture of the inside as well.

This is the Breakfast Burrito!

It makes for a fast, easy, and filling morning go to and is one of our favourites. I could throw one of these together in less than 5 minutes.

It takes a little longer if you want to add onions, cilantro, and avocado. Hey, anything goes. That’s why burritos are so versatile, you can wrap just about any ingredient into them.

But this recipe is for a plain old breakfast burrito 🌯

  • Two eggs – lightly beaten
  • salt and pepper to taste
  • 2 tbsps of cubed Cheddar
  • 1 flour tortilla
  • 6-8 pieces of hot banana pickled peppers

Directions:

In a small frying pan add a small amount of olive oil. Let this heat up at a medium to high temperature.

Now add the eggs and the cheese and stir until the eggs and cheese are combined and the cheese is starting to melt. Flip it over with a spatula and cook until the eggs are done. This shouldn’t take more than two minutes.

Now turn the heat off and place your tortilla shell on top of the eggs in the pan, like a lid. This will warm the tortilla up and make it easier to roll.

Next place the warmed tortilla on a plate and scrape the eggs on to the middle of the tortilla. Top with the hot banana pickled peppers.

Now, fold two of the sides of the tortilla over so that it looks like a rectangle. Then take the part of the rectangle closest to you add fold, tuck, and roll until you have a thing that looks like a big ass cigar.

Enjoy with a nice cup of coffee!
