Scrumptious Coleslaw

I think coleslaw is one of those dishes people either love or hate. We would serve it in our restaurant with all the sandwich plates and it would either be completely eaten or totally left untouched. I would say it was more or less a 50/50 split with about 2% of people who would try it and then leave it.

I love coleslaw! I prefer a vinegar based dressing over a mayonnaise based dressing but I think most people like mayonnaise.

So, this recipe is for a mayonnaise based dressing!

  • One medium to large head of cabbage- shredded
  • 1 carrot – shredded
  • 1/2 a red bell pepper – julienned
  • Two green onions – chopped up fine
  • 1 cup of mayonnaise – Not miracle whip or salad dressing
  • 1/4 cup of white vinegar
  • 1/8 cup of white sugar
  • One tsp of celery seeds
  • 1 tsp of salt
  • One tsp of ground black pepper
  • 1 tsp of onion powder

Directions:

I prefer chopping up the cabbage by hand but if you have a food processor, go for it. Same with the carrots.

If you’re feeling lazy and/or don’t have time, then just buy a bag of ready made coleslaw mix.

For the dressing, in a small bowl add the mayo, vinegar, sugar, and spices. Then mix really well.

In a large bowl add your vegetables and then the dressing and combine.

The coleslaw will benefit from resting for a bit in the fridge, like half an hour or so. Make sure you consume it within two days, as it really won’t be very good after 2 days.

Coleslaw is the perfect side because it goes with so many main dishes.
