Pork Chops with an Onion Bourbon Sauce

Ahhh, yes…the pork chop! I love a good pork chop, problem is, it’s easy to dry out a pork chop.

One thing that will help with this problem is to create a sauce. Another would be to cook the pork at a low temperature over a long period of time. What I mean by this is to cook the pork at 300* F for an hour or more depending on the cut of meat. Pork benefits considerably from extra cooking time. So long as it’s in a sauce and is covered up to keep the moisture in.

I usually make a mushroom gravy for my pork chops but I forgot to pick up some mushrooms when I went grocery shopping. Hey, if it’s not on the list, it doesn’t exist. Sometimes, I will also make a barbecue sauce but I wasn’t in the mood for barbecue. I did have some bourbon though and I thought “ Hey, I could make an onion bourbon sauce instead.” So that’s what I did!

  • 4 centre cut pork chops – bone in
  • 2 tbsps of oil
  • Seasoning salt
  • ground black pepper
  • garlic powder
  • Two onions – sliced
  • 1 tbsp of butter
  • 2 tbsps of flour
  • One cup of water
  • 1 oz. of bourbon 🥃
  • One ounce of cream
  • Salt and pepper to taste

Directions:

In a large frying pan add the oil ( canola or olive, whatever you have ) and heat at a medium to high temperature. Add the pork chops to the hot frying pan. After a minute or two flip them over and apply the seasoning salt, pepper, and garlic powder to the chops. In a couple more minutes, flip them again and apply the seasonings to the over side of the chops. Continue to cook until both sides of the chops have a nice golden colour to them. Don’t worry if they’re not completely cooked through as you will be adding them to the sauce and cooking them longer.

Remove chops from the frying pan and on to a plate and set aside for later. Turn down the heat to medium and add the onions to the pan. You will notice that the onions will start to deglaze the pan as they cook. When the onions are starting to get soft add the butter to the pan and continue to cook for a couple more minutes.

Next, add the flour to the pan and cook for a few minutes. Then slowly add the water to the mixture. It should start to thicken up quickly. Add only enough water so that you have a gravy like consistency.

Now you can add the bourbon, cream, salt, and pepper. Let this cook for about 5 minutes then give it a taste. Adjust seasonings as you see fit. Remember, you will be putting the chops in sauce to continue to cook and that will also add more flavour to the sauce.

Time to put the pork chops into the sauce along with all the drippings from the chops. Now, turn down the heat to low and cover the pan with a lid. Let this simmer all together for at least half an hour or so. Don’t worry, the longer the better. This will give you time to get the rest of your meal together.
